Menu Planning Monday



So didn't get through all the meals I planned for last week, and I still have to do a grocery shopping.

Meal 1
Salmon with mustard sauce (mustard, mayonaisse, vinegar, sugar, I think I might throw in a few capers). Rice and veggies

Meal 2
Honey mustard chicken, rice and veggies

Meal 3
I think I'll make another spinach and ground beef dish, but this time I think I'll use ground tofu. (Heat tofu in large pot, add spinach, cooked rice, pasta sauce of choice and pine nuts, stir until well blended, serve as a hearty stew).

Meal 4
Tofu tomato and pork with rice and veggies (a little olive oil in the skillet, cook meat of choice, season as desired, add soft tofu cut up and tomatoes cubed 5 minutes towards the end, sorry there's not much more detail than that, I usually make it lightly flavoured with garlic salt and paprika).

Meal 5
Cajun chicken stew (Cajun chicken, or regular but then add paprika and chili powder, 2 cans of cream of anything and the corresponding water, frozen veggies and egg noodles).

Good for you eating Tofu. That's something I could never get used to. It's so good for you though.

Your Cajun Chicken Stew sounds delicious. I may need to try that one. We love cajun, but I don't make it much.

Your meals sound great! Would you be willing to post the tofu recipe? Our family adores tofu (well, most of us do anyhow :)), and I'm always looking for new ways to cook it!

I did what I could for the tofu meals, they are very simple, essentially throw everything in a pot, season and stir until desired temperature is reached. Last week might have more details.

Mmmm, honey mustard chicken sounds so good to me right now! I wish I were brave enough to try tofu, but I am not. I know I'd have a revolt on my hands, LOL!

I will most definitely be trying the cajun chicken stew (LOVE cajun food!) and the ground beef and spinach, YUM!
